Chiang Mai Community Food Journey
Tour Overview

Northern food is not a list of famous dishes. It is a set of habits that arrived with the Lanna courts, absorbed what the valley could grow, and were then adapted by families who had to feed people cheaply.
This day follows that logic. You begin at the market, but you do not shop as a tourist. You stand beside your host while they choose, and you learn what is actually good this week and what is merely available.
Then you cook. Not a class, not a demonstration you watch from a distance — you put your hands in the mortar and help make the dish that will be eaten later.
The afternoon is where the day turns. Northern food is built around chilli and a fermented shrimp paste that smells alarming and tastes extraordinary. Your host will explain how it is made and why every family makes it slightly differently.
You eat what you made, sitting on the floor of someone's home, and the afternoon stretches out the way afternoons do when nobody is keeping a schedule.

DAY01
Market, cooking and a family table
Early Morning At the market with your host. Learn to read what is good this week: the chillies, the herbs, the fermented pastes. Buy what the meal needs. Late Morning Travel to the family kitchen. Hear what is being cooked today and why it changed from last week. Afternoon Cook together. Grinding, pounding, frying, tasting and adjusting. You will do the work, not watch it. Late Afternoon The fermented shrimp paste. How it is made, how long it rests, and why every household has its own version. Evening Eat what you cooked, sitting together. Questions about Lanna kitchens are best asked with a bowl in your hand.
